Fried Black Olives in Jar Cooking

The fried black olives in jar cooking that I offer you today were a real discovery even for me. Not so much because of the recipe itself, which I had already made in a pan, but because I was able to cook the nolche olives in a jar. This delicious Apulian appetizer is made with sweet black olives that ripen in September, herbs, and a little oil. Contrary to what you might think, the Apulian fried olives cooked in jar cooking will not have a boiled effect. Just follow my tips, and you’ll have fried olives that will keep for 15-20 days, thanks to the vacuum seal. When you want to serve them, just pull the seal and bring them to the table. Maybe accompanied by some Apulian caciotta cheese and some good Altamura bread.

How to make fried black olives in jar cooking

  • The recipe for fried olives in a jar is very simple. Just distribute them in the jar, which should have a thin seal. Season with oregano, chili pepper, salt, oil, and peeled garlic left whole if you don’t particularly like its taste, otherwise slice it. The same goes for the chili pepper if you don’t like spicy.

  • Clean the rim of the jar, close, and latch. Shake the jar to mix the olives with the seasoning. Set the microwave to maximum power (I use 900 watts), insert the jar, and start cooking for 6 minutes.

  • At the end, let the closed jar rest for 20 minutes.
