Giardiniera in microwave jar cooking, a Piedmont appetizer made with vegetables that can be cooked in a jar. Like the Russian salad in jar cooking, this recipe also cooks in just a few minutes and can be stored for many days under vacuum. Perfect to serve year-round and during holidays, perhaps with another series of jar appetizers, such as the tartrà in jar cooking, the bell pepper pie in jar cooking, and the essential seafood salad in jar cooking. With microwave jar cooking, preparing a great homemade giardiniera has become really easy. You just need to buy the vegetables, clean them, distribute them in jars along with an emulsion based on vinegar, white wine, sugar, and proceed as per the instructions for jar cooking. - 1 lb cauliflower
- 7 oz carrots
- 6 oz pearl onions
- 14 oz bell peppers (red and yellow)
- 7 oz green beans
- 1 stalk celery
- 4 oz green olives in brine (pitted)
- 0.42 cup white wine vinegar
- 0.42 cup white wine
- 3 tsp sugar
- 0.84 cup water
- 4 tbsp extra virgin olive oil
- 1 tsp salt (heaping)
- 1 leaf bay leaf

How to Prepare Sweet and Sour Giardiniera in Jar Cooking
To prepare the giardiniera in jar cooking, you must first wash and clean all the vegetables.
Cut the cauliflower into florets, peel and slice the carrots into rounds, and cut the celery into pieces.
Trim the green beans and cut them into two parts. Remove the stem and seeds from the bell peppers and cut them into pieces as uniform as possible.
Take a rather large jar (a screw-top or hermetically sealed one works fine), or a small bowl and pour the water, wine, vinegar, sugar, salt, and oil inside. Close and shake the jar vigorously until the salt and sugar dissolve, or stir well.
Now, divide the vegetables equally into the three jars, add the olives and a piece of the bay leaf.
Before finishing, evenly distribute the emulsion in the 3 jars, which will give all the taste and flavor to the sweet and sour giardiniera.
Thoroughly clean the edges, place the seal, and close with the lid, fastening with the 4 clips as explained in the jar cooking instructions.
Set the microwave to your tested power, I use 600 watts, insert the first jar and start cooking for 10 minutes. While the first jar is in the microwave, shake the others to mix the dressing.At the end of cooking, let the closed jar rest for 20 minutes; during the rest, the recipe will finish cooking, and vacuum will form in the jar. At this point, you can turn the jar upside down to distribute the dressing.
Meanwhile, cook the other jars of giardiniera in jar cooking.
When the jars have returned to room temperature, store in the refrigerator for 15-20 days. If possible, turn the jars every 3-4 days.
Remove the clips, pull the seal and drain the giardiniera. Serve it directly in the jars as a centerpiece.

If fresh green beans are unavailable, you can use frozen ones; just let them thaw before adding them to the jar. If you like, you can also add zucchini and cucumbers.
Do not increase the vinegar dose, as jar cooking amplifies aromas and flavors, and it would be too strong.
The giardiniera in jar cooking keeps in the refrigerator for 15-20 days, thanks to the vacuum.
