Gratinated artichokes and potatoes in instant pot, a new recipe to add to my Italian Recipes with instant pot. Easy and really tasty, a quick way to enjoy artichokes and potatoes differently.

When they are in season, even if they cost a bit, I love cooking artichokes and preparing lots of Recipes with artichokes. I have experimented with all my favorite appliances: like the Microwave sautéed artichokes, the Microwave cooked stuffed artichokes, the Instant pot stuffed artichokes, and even in air fryer like the Fried artichokes in air fryer!

Not to mention all the artichoke and potato recipes that, besides being a good side dish, can also be served as a vegetarian main course.

Ingredients

  • 3 artichokes
  • 3 potatoes
  • 6.8 oz vegetable broth
  • 1 tbsp extra virgin olive oil
  • salt
  • pepper
  • 2.5 oz breadcrumbs
  • 1.4 oz grated Parmesan cheese

What You Need to Cook Artichokes with Potatoes

  • 1 multicooker

How to Prepare Gratinated Artichokes and Potatoes in the Multicooker

  • Clean the artichokes, remove the thorns, cut them in half, and remove the inner choke.

    Now cut them into wedges and place them in a bowl full of water and lemon juice. Proceed in the same way until all the artichokes are cleaned.

    Soaking the artichoke wedges in water and lemon prevents them from oxidizing and turning dark.

    Wash the potatoes, peel them, and slice them about half a centimeter thick.

    Rinse them under running water, then dry them.

    Pour a drizzle of oil into the multicooker pot.

    Place half of the potato slices on the base.

    Cover with all the cleaned and drained artichokes and add a few slices of garlic.

  • Season with salt and pepper.

    Place the remaining potato slices over the artichokes.

  • Pour the vegetable broth into the pot.

    Close with the “pressure cooker” lid and cook for 18 minutes.

  • Once the cooking time has elapsed, depressurize the pot and remove the lid.

    Sprinkle the surface of the artichokes with seasoned breadcrumbs and grated Parmesan cheese.

    At this point, put the lid on and broil at 482°F for 10 minutes.

    Serve the gratinated artichokes and potatoes in an instant pot hot.
