Homemade citrus butter is a recipe that allows us to preserve butter for a long time and have it ready and flavored for many recipes. Perfect when we have butter nearing expiration or when we’ve juiced citrus fruits and want to use the peels. Today, I offer you the restored recipe, the first time I published it was in 2015, after visiting Lapland where, in a house nestled in the woods, we were served steamed salmon with vegetables, once the package was opened, two dollops of citrus butter were placed on top. Needless to say, when I returned home, I tried the salmon and immediately made the flavored butter. I love having ready preserves that help me create flavored dishes, from homemade garlic oil, to salted ricotta, and how to preserve basil. Ingredients to make citrus-flavored butter
- 9 oz butter (high quality)
- 1 orange (peel, untreated)
- 1 lemon (peel, untreated)
- 3 pinches salt
- 2 pinches pepper
- 9 oz butter
- 1 bunch herbs (thyme, chives, oregano, rosemary, sage)
- 3 pinches salt
- 2 pinches pepper
What You Need
- 1 Bowl
- 1 Grater
- 1 Hand Whisk
- 1 Parchment Paper
Procedure
Remove the butter from the refrigerator and let it soften for an hour. Wash and dry the orange and lemon thoroughly.
Place the stick of butter in the bowl or plate and flavor it with the grated peel of the lemon and orange, add salt and pepper. Work the butter with the whisk or fork until the peels are combined.
Take the parchment paper, place the citrus butter on it, and compact using the paper or your hands, shaping it into a cylinder. Wrap the stick with the same paper and close the paper at the sides.
Place the butter in the refrigerator. After an hour, it will be solid again and ready for your recipes.
Wash, dry thoroughly and chop the herbs. Follow the citrus butter recipe.
Once the butter is flavored and has rested in the fridge, open the package and immediately cut it into slices. Close the package and place it in a food-grade plastic bag. Put in the freezer and thus it will be preserved for a long time. When you need it, just take one or more slices.
Rosella’s Tips for Using Flavored Butter
Citrus butter is excellent for seasoning steamed salmon, steamed vegetables, or for spreading. Great on salmon canapés.
Herb butter will make your pork roast or beef special, for seasoning steamed potatoes or for spreading on bruschetta with some prosciutto.
