Perfect for seasoning vegetables, fish, meats, or even a simple salad. Garlic oil is a recipe my grandmother always kept in the pantry and, when she wanted to make grilled fish fillets special, she would dress them with this aromatic oil. Ingredients for making flavored oil

  • 2 cups extra virgin olive oil
  • 6 cloves garlic
  • 3/4 cup white wine vinegar
  • 1 teaspoon dried oregano
  • 4 berries Sichuan pepper

What you need

  • 1 Bowl
  • Paper towels
  • 1 Glass bottle 500 ml

How to make the flavored oil preserve

  • Peel and dry the garlic cloves with paper towels. Put them in a glass container and cover them with white wine vinegar. Mix well and place them in a cool, dark place for 24 hours.

  • After the resting time, remove the garlic cloves from the vinegar and dry them well with clean paper towels. Place the garlic cloves in a wide-necked bottle. Add the oregano, pepper, and pour the oil over them. Close the bottle and shake it to mix the flavors. Store the garlic oil in a cool, dark pantry. Allow the garlic to infuse the oil and make it fragrant. You can start using it after a month to fully appreciate the aroma.

The flavored oil can be made in many variations and according to your taste. I used Sichuan pepper, and alternatively, you can use smoked pepper or cubeb pepper.

You can flavor the oil with a juniper berry or a dried chili pepper.

  • Is there a risk of botulism when making flavored oil?

    No, the treatment in vinegar, as in the stuffed peppers in oil, ensures preservation and prevents the formation of bacteria and fungi, as the pH is too acidic.

  • Do I need to boil the oil to preserve it?

    No, garlic oil jars do not need to be boiled, the oil and vinegar are 2 natural preservatives and the oil would fry.

  • Why do I have to wait a month to use the flavored oil?

    A month will be the necessary time for the garlic to release its aroma into the oil.

  • Can I top up the oil as I use it?

    Yes, the oil can be replenished several times, up to 5-6 times.
