Many of you have asked me for the recipe, and after publishing the recipe of honey pumpkin in my book Air Fryer (Gribaudo), today I want to explain to all of you how to cook pumpkin in an air fryer. Since 2018, I have been using this appliance a lot; I started with air-fried potatoes, then moved on to air-fried roasted peppers and whole eggplants in an air fryer (these are the most popular recipes), and I remember when this powerful appliance that speeds up cooking times and reduces preheating was often criticized. It was an uphill journey, as often happens in Italy, introducing something new in the kitchen is indeed a challenge, and as often happens, once its utility is understood, everyone becomes an expert, even copying here and there, and, unintentionally, I rhymed!

Ingredients

  • 1.1 lbs Delica pumpkin
  • extra virgin olive oil

What You Need

  • 1 Air Fryer
  • 1 Oil Sprayer

Method

  • Wash the pumpkin and cut it into regular slices or sticks, depending on the pumpkin’s shape. Place the pumpkin pieces in the air fryer basket, spray them with extra virgin olive oil and cook for 20 minutes at 392°F, turning them halfway through cooking. Salt and serve the pumpkin.

    If your air fryer allows you to set it to 428°F or 410°F, use these temperatures to get a nicely browned and crispy pumpkin cooked in the air fryer. Clearly, it will be ready in less time.

  • For an extra flavor touch, arrange the pumpkin slices in a bowl, add 2 tablespoons of warm honey, 2 of oil and season with rosemary or thyme, nutmeg, and salt. Mix well and cook as per the recipe.

  • Peel the pumpkin, remove seeds and filaments, and cut it into cubes. If desired, you can season the pumpkin cubes to taste and then distribute them in the air fryer basket and cook for 10-12 minutes at 392°F.

  • If you need to cook a whole pumpkin in the air fryer, as if baked, be sure to check the basket’s capacity and ensure the pumpkin does not touch the air fryer’s heating element. That said, it will be very useful to cook the whole pumpkin in the air fryer; its pulp will be great for making pumpkin puree and gnocchi. Place the pumpkin in the basket and start cooking for 35 minutes at 284°F, turning the pumpkin halfway through cooking. Higher temperatures, reducing cooking times, can only be achieved if the heating element is distant from the vegetable. Alternatively, you can cut the pumpkin in half and cook for 25 minutes at 302°F.
