Jar-cooked Raspberry Coulis

The jar-cooked raspberry coulis is a cooked fruit sauce, useful for garnishing cheesecakes, enjoying by the spoon, or as a jam. If you’ve discovered that jar-cooking fruit in the microwave is really useful and practical, don’t miss the chance to have a quick raspberry sauce, without gelatin, and that lasts for 15 days in the fridge. As many of you know, I follow a low glycemic index diet, so I thought of making this jar-cooked raspberry coulis without sugar using erythritol. This natural sweetener has the advantage of being tasteless, zero calories, zero glycemic index, and reacts like sugar during cooking.

Ingredients

  • 6.35 oz raspberries
  • 1.06 oz erythritol
  • 1/4 vanilla bean (even exhausted)

  • 1 Microwave inverter
  • 1 Jar 500 ml with thin gasket
  • 1 Immersion Blender

Procedure for Cooking Raspberries in Jars

  • Quickly rinse the raspberries under running water, drain them very well, and distribute them in the jar. Add the erythritol and the piece of vanilla bean. Clean the rim of the jar from any sugar grains, close, and fasten. Place the jar in the microwave, set it to medium power, I use 500 W, compared to the tested 750 watts of power, and start for 6 minutes.

  • At the end of the cooking, leave the jar closed to rest until it cools down. This step is essential because the fruit will finish cooking low and slow, a vacuum will form in the jar, and the jar-cooked raspberry coulis will achieve the right consistency.

  • When the jar is at room temperature, you can store it in the refrigerator, where it will last for 15 days. When you want to use the raspberry sauce, pull the gasket to open the jar, remove the vanilla bean, and blend using an immersion blender.

As an alternative to the exhausted vanilla bean, you can use vanilla drops or a lemon peel. For the jar-cooked raspberry coulis recipe, it is necessary to use jars with a thin gasket. The only ones that allow pulling the gasket at cold.
