Ingredients for making classic apple cake in the microwave

  • 3 eggs
  • 3/4 cup sugar
  • 1/2 cup sunflower oil (or extra virgin olive oil)
  • 3/4 cup Greek yogurt (0% or 2% fat)
  • 1 teaspoon vanilla essence
  • 1 cup all-purpose flour
  • 3/4 cup potato starch
  • 1 packet baking powder
  • 3 apples (small)
  • 2 tablespoons inulin (long-chain – to be mixed with flour)
  • 3/4 cup erythritol (instead of sugar)

What you need to bake cakes in the microwave

  • 1 Microwave Oven with combined function
  • 1 Microwave Tray in heating material
  • 1 Bowl
  • Electric Whisks
  • 1 Toothpick
  • Parchment Paper

Procedure

  • Crack the eggs into the bowl and add 3/4 cup sugar (or erythritol), beat them with the electric whisks until you obtain a light and fluffy mixture. Continuing with the whisks, add the oil, vanilla essence, and yogurt in a thin stream, adding a little at a time, so as not to deflate the mixture.

    Sift the flours with the baking powder (and inulin if using) and incorporate them into the egg-based mixture with upward movements using a spatula. Set aside.

    Prepare the baking tray by spraying it with cake release or greasing and flouring it.

    Peel the apples, cut them in half, remove the core, then slice them thinly.

  • Once the bases are ready, pour half of the mixture into the tray and level it, distribute half of the apples, and pour the remaining batter on top. Level it and cover with the remaining apple slices, arranging them obliquely and inserting them into the batter. Sprinkle with the remaining sugar. Cook the apple cake in the microwave for 12 minutes, using the microwave + grill combined function, choosing a lower power if possible. Check with a toothpick to ensure the cake’s surface does not darken too much. If necessary, continue cooking for another 4 minutes by placing a sheet of parchment paper on the cake.

  • With the help of a plate, turn the cake over and then flip it onto a rack* to cool.

To bake the apple cake in the microwave without the crisp or combined function, you can opt for the microwave-only function, choosing about 350 watts. Cook for about 15 minutes, and after the toothpick test, proceed with the grill function only until browning the cake’s surface. In this case, the heating material tray will be indispensable.
