Ingredients

  • 2 steaks salmon (7 oz each)
  • 2 tbsps orange juice
  • 1 lemon (juice)
  • 2 tbsps extra virgin olive oil
  • 1 tbsp soy sauce
  • salt
  • chives
  • pink peppercorn

What You Need to Cook Salmon in Foil

  • 1 Microwave oven
  • 1 Microwave tray

How to Prepare Baked Salmon in Foil in the Microwave

  • Place the two salmon steaks on a cutting board.

    Remove any bones.

    Also remove the central backbone, then roll the two steaks on themselves to form a circle. To secure the salmon steaks, use either string or, as I did, two steel skewers or wooden skewers.

  • In a bowl, prepare a dressing with orange juice, a few drops of lemon juice, and a tablespoon of soy sauce.

    Also add salt and freshly ground pink peppercorns to the bowl and whisk vigorously with a fork.

  • Take two sheets of parchment paper, place a salmon steak on each.

    Drizzle the two salmon steaks with the dressing, then also add chives and more whole pink peppercorns.

    Close each foil packet, then cook, one at a time, in the microwave, at 800W for 8 minutes.

    Serve the salmon piping hot.

How to Store Microwave Baked Salmon in Foil

Baked salmon in foil is best when freshly made, but you can store it in the refrigerator for two days.
