Baklava is a dessert made of layers of phyllo dough and nuts, enriched with syrup, in my case of honey, where I used erythritol and inulin to lower the glycemic index.

Ingredients
- 4.2 oz pistachios
- 2.8 oz vegetable margarine
- 6 sheets phyllo dough
- 5.3 oz acacia honey
- 2 tbsp erythritol
- 2 tbsp inulin (long-chain)
What you need to cook sugar-free baklava
- 1 Microwave oven
- 1 Baking dish 30 cm crisp
How to prepare sugar-free baklava in the microwave
Melt the vegetable margarine in a bowl, in the microwave for 1 minute at 600 W.
Lay down a sheet of phyllo dough, brush with margarine, then cover with the second one, brush again and finally cover with the third brushing with margarine once more.
Place the pistachios, finely chopped, on the phyllo dough surface, distributing them evenly.
Cover with the remaining phyllo dough sheets, brushing them as the previous ones.
Cut the baklava into diagonal strips to obtain the typical diamonds that distinguish baklava.
Cook the baklava in the microwave with the combined microwave plus grill function for 12 minutes, or until the surface of the baklava turns a nice golden color.
When it’s ready, take it out of the oven.
While the baklava is cooking in the microwave, heat the honey in a saucepan along with two tablespoons of erythritol and two tablespoons of inulin.
Bring to a boil until foam forms on the surface.
Once you have taken the baklava out of the oven, pour the honey syrup over the still warm cake and let it rest at room temperature so the baklava absorbs the liquid.
Serve the baklava when the syrup is fully absorbed.
How to store sugar-free microwave baklava
The sugar-free microwave baklava can be stored at room temperature for 3-4 days.
