Microwave Eggplant Rolls are delicious and easy to make, the microwave-cooked variant of my Air Fryer Eggplant Rolls. Prepared with a delicious Microwave Tomato Sauce cooked on the spot, but obviously, if you already have it, you can use Fresh Microwave Tomato Sauce or Microwave Jar-Cooked Tomato Sauce ! To prepare these rolls, you only need to grill the eggplants as we have already done for the Microwave Eggplant Pizzas, fill them as you like with cheeses and hams, and then cook them for a few minutes in the microwave! I’m sure even your kids will love them!

Ingredients
- 2 oval eggplants
- 9 oz mozzarella (or smoked cheese)
- 1.5 cups breadcrumbs
- 5.5 oz cooked ham
- 1/4 cup water
- 2 tablespoons Grana Padano cheese
- 1 clove garlic
- basil
- 1 3/4 cups tomato puree
- 1 scallion
- salt
- extra virgin olive oil
What you need to cook the microwave eggplant rolls
- 1 Microwave oven
- 1 Microwave tray
How to prepare microwave eggplant rolls
Wash and dry the eggplants and cut off the stem.
Cut the eggplants into slices not too thick and, with the help of a small knife, make cross cuts on the surface of each slice.
Pour a circle of oil on the microwave tray and place the eggplant slices on it.
Slightly salt the slices and grill the eggplant slices in the microwave with combined function (microwave + grill) for 10 minutes, or with the crisp function. After the first 10 minutes, turn the eggplants and continue cooking for another 3 minutes.
Slice a scallion and place it in the crisp tray.
Add a circle of oil and saute at 850 W for about 2 minutes.
Remove the tray, add the tomato puree, two pinches of salt and a basil leaf and cook again for 8 minutes at 850 W.
Peel the garlic clove, remove the central core, and chop it finely.
Wash and chop the basil, add them to the breadcrumbs in a bowl and add the water and salt. Mix to combine the ingredients.
Place the eggplant slices on a cutting board, fill each slice with a bit of flavored breadcrumbs.
Cut the mozzarella or smoked cheese into as many sticks as there are eggplant slices, I made 16.Place at the center of each eggplant slice a piece of cooked ham, if using, and a stick of mozzarella.
Roll each slice to form a roll, secure it with a toothpick if necessary, and place it on the tray, with the seam side down.
Continue the same way until you finish the ingredients.
Distribute the rolls inside the crisp tray over the tomato sauce, taking some to flavor the surface.
Finish by sprinkling all the rolls with the grated cheese.
Insert the rack in the microwave, place the tray with the rolls on top and cook for 10 minutes with combined microwave + grill function at maximum power.
Let it rest for 5 minutes in the turned-off microwave and then garnish with basil leaves and serve at the table while hot.
