Microwave Fennel Casserole

Microwave fennel casserole is one of my recipes that adds to all the Microwave Recipes and is also one of the most loved. It cooks in 15 minutes and is enriched with ham, cheese, and a delicious crispy crust, like the Fennel Casserole in a Jar. It will be enough to create layers of thinly sliced fennel, alternating with ham and cheese and then cook everything with the microwave plus grill function. Unlike the microwave fennel cutlets, this recipe is excellent to serve as a second course.

Depending on the season, you can choose to use fresh or frozen fennel. I love making recipes with microwave-gratinated vegetables, like this Pumpkin Parmigiana in the microwave or this delicious Zucchini Parmigiana in the microwave.

Ingredients for the casserole

  • 2 fennel bulbs (about 10.5 oz)
  • 3 slices cooked ham
  • 6 oz emmentaler (or fontina)
  • 2 tbsps breadcrumbs
  • 1 tbsp Grana Padano cheese, grated
  • 2 tbsps extra virgin olive oil
  • 2 pinches salt

What you need to make the fennel casserole in the microwave

  • 1 Microwave baking dish in Pyrex or microwave-safe material 10.2 inches
  • 1 Mandoline
  • 1 Microwave oven

How to make microwave gratinated fennel

  • Wash the fennel and remove the tougher and stained parts. Cut them in half and wash them. Then, with the help of the mandoline, slice the fennel into thin pieces.

    Chop the cheese, you can do this with a mixer or a large-hole grater. Alternatively, you can slice it into thin pieces.

    Brush with oil and sprinkle a spoonful of breadcrumbs on the bottom of a microwave-safe dish. Distribute some of the fennel, salt it, and cover with some ham and half of the fontina. Continue with another layer of fennel, ham, and cheese. Finish with a layer of well-arranged fennel, brush with the other spoonful of oil, and sprinkle the remaining breadcrumbs and grated cheese on top.

  • Place the fennel dish in the microwave and start the initial cooking for 14 minutes with the combined function plus grill.

    At the end, move the dish to a microwave riser and continue cooking for another 3 minutes.

    Once cooked, serve your hot and melting fennel casserole.

How to store the fennel casserole

You can store the casserole for 24 hours out of the refrigerator, or in an airtight container for 2-3 days in the refrigerator.
