Microwave fennel cutlets are a great quick side dish that, on the occasion of the release of The Great Microwave Cookbook (Gribaudo) I want to give to you today. If you don’t know how to cook vegetables in the microwave, here’s another recipe that will show you how to cook fennel in the microwave. Soft and perfectly cooked inside and crispy outside. I tried cooking the same recipe in an air fryer and I can say that the microwave version won hands down. While the fennel cutlets in the air fryer dried out a bit, the combined microwave and grill cooking ensured that the vegetable cutlets in the microwave were cooked to perfection. To make the fennel cutlets, I sliced them, dipped them in beaten egg, and then used my flavored breadcrumbs.

Ingredients for Making Fennel Cutlets
- 1 fennel (6.3 oz)
- 1 egg
- 4 tablespoons breadcrumbs
- extra virgin olive oil (spray)
- 2 pinches salt

- 1 Microwave baking dish in heating material
- 1 Microwave rack
- 1 Deep plate
- 1 Oil sprayer
- 1 Cutting board
- 1 Knife
How to Make Fennel in the Microwave
Beat the egg in the plate. Wash the fennel and remove the toughest parts and the fronds*. Slice the fennel into whole and even slices.
Dip the fennel slices in the egg. Spray the baking dish with a little oil and sprinkle the surface with half the breadcrumbs. Place the egg-coated fennel slices on the breadcrumbs and distribute the remaining breadcrumbs on top.
Insert the rack into the microwave, place the fennel baking dish on top, and start the cooking for 10 minutes with the combined microwave + grill function. Then, flip the fennel cutlets and continue cooking for another 5 minutes.
