Microwave Gratinated Cod

The microwave-gratinated cod cooks perfectly in just 8 minutes. A second course fish dish cooked in the microwave, perfect for when you don’t want to turn on the oven and want to create a light recipe to cook the cod. Like the microwave trout or the steamed salmon in the microwave, this whole fish fillet also cooks in the microwave and can be enjoyed as is or used to make microwave fish balls. For this, I used my delicious breading with added lemon zest and thyme, which will make this gratinated cod fillet very aromatic and light. Ingredients for cooking the cod in the microwave

  • 14 oz desalted cod (boneless and with skin)
  • 2 tbsp breadcrumbs
  • 1 lemon zest (untreated)
  • 1 sprig lemon thyme
  • 2 sprays extra virgin olive oil
  • 4 leaves lettuce
  • 2 slices lemon
  • 2 pinches chopped parsley
  • 2 fresh scallions

What you need

  • 1 Microwave baking dish in heating material – Crisp
  • 1 Microwave stand
  • 1 Grater
  • Paper towels

Preparation for the gratinated cod

  • Use tweezers to remove the bones from the cod. Pat the fish fillet with kitchen paper towels.

  • Wash the lemon and grate its zest to flavor the breadcrumbs, adding the thyme as well.

    Place the fish on the microwave dish and spray it with oil on both sides. Cover the cod with the flavored breadcrumbs, making sure it adheres well. Peel the scallions and lay them next to the cod, spray them with a bit of oil and, if you prefer, a pinch of salt and pepper.

  • Insert the stand in the microwave and place the dish on top, so as to bring it closer to the grill. Grill the cod for 8 minutes using the combined microwave + grill function, at the maximum available power, or using the Crisp function.

    Serve the gratinated cod on lettuce leaves, accompanied by the microwaved braised scallions, lemon slices, and chopped parsley.

Tips for serving gratinated cod

You can add diced cherry tomatoes and oregano, or a mixture of olives and capers.
Great variation with grated orange zest.
