Microwave Lentil Meatballs a vegetarian recipe super easy and quick, the lentil meatballs take only 8 minutes to cook in the microwave! They are delicious and perfect both as an appetizer and main course.
If you want to store them for longer, you can simply freeze them as they are, or prepare the jar-cooked Lentil Meatballs that keep for 15 days in the refrigerator thanks to jar cooking. I’ve made various versions of lentil meatballs, like Lentil Meatballs in Sauce and Red Lentil Meatballs, but these are disarmingly simple and will save your dinner on many occasions!

How to Prepare Microwave Lentil Meatballs
Choose whether to use dry lentils and cook them following my guide for cooking legumes, or use canned cooked lentils.
You can use either regular lentils or red lentils and prepare the Red Lentil Microwave Meatballs.
Put the lentils in the blender and blend them to obtain a smooth cream.
Transfer the obtained lentil puree to a large bowl and add the egg.
Add the well-seasoned breadcrumbs and mix with a fork or spoon to combine.
Lightly grease your hands.
Take small amounts of lentil mixture and form balls the size of a walnut.
Place the lentil meatballs on a microwave crisp tray.
Continue until all the mixture is used.
Spray a little extra virgin olive oil over all the lentil meatballs.
Place the crisp tray in the microwave on combined microwave and grill function for 8 minutes, placing the tray on the microwave riser.
At the end of cooking, serve your microwave-cooked lentil meatballs hot or at room temperature.
