Microwave Light Lasagna is a variant of the more classic Microwave Bolognese Lasagna, but still a Microwave Main Course, because you know I love to prepare and cook Microwave Recipes.
An alternative also to the Light Lasagna in jar cooking which are cooked in a jar and are single-serving, therefore more convenient for indulgence, while the microwave light lasagna can be cooked in a larger dish and therefore also for more people.
These lasagna are prepared with Microwave-Cooked Béchamel and Microwave Spinach, mixed with good ricotta to create a really tasty main dish!

Ingredients
- 2 cups milk
- 3.5 tbsp all-purpose flour
- 3.5 tbsp butter
- nutmeg
- salt
- 1.1 lbs spinach (fresh herbs)
- 1 cup ricotta
- 4 oz mozzarella
- 6 sheets green egg lasagna (fresh)
- 3 tbsp grated Parmesan cheese
- 1 tbsp butter
- nutmeg
- salt
What You Need to Cook the Light Lasagna

How to Prepare the Light Lasagna in the Microwave
Prepare the béchamel in the microwave.
Melt the butter in pieces in the bowl in the microwave at low power for a couple of minutes.
Add the flour to the butter and stir with a whisk, adding the milk gradually.
Flavor the béchamel with nutmeg and salt. Mix well again.
Now, set the microwave to about 600 watts for 4 minutes, place the bowl inside and start. After this time, stir the béchamel well, always using the whisk.
Put the bowl back in the microwave and start again, still at 600 watts for another 4 minutes. Repeat the operation and start for the last 4 minutes.
Wash the vegetables well and place them in a bowl. Cover the bowl with microwave-safe plastic wrap.
Cook the spinach in the microwave at 800 W for 7 minutes.
Once ready, squeeze and finely chop the spinach with a knife.
Place the ricotta in a bowl.
Add the chopped spinach along with salt, nutmeg, and a portion of the béchamel.
Lightly butter a dish that can go in the microwave.
Place the first sheet of fresh green lasagna on the bottom of the dish.
Spread a spoonful of ricotta filling over the lasagna and sprinkle the surface with a spoonful of béchamel.
Then crumble the mozzarella over the filling and lastly add a sprinkle of grated Parmesan cheese.
Then cover with another sheet of lasagna and proceed this way until you have used all the ingredients.
Finish the light lasagna by putting the mozzarella and Parmesan on top.
Cook the light lasagna in the microwave for 15 minutes with combi+grill function at maximum power.
At the end, let the lasagna rest for 5 minutes in the microwave off and closed.
Serve the light lasagna hot.

The microwave light lasagna can be stored for 3 days in the refrigerator.
