Microwave Omelette Roll

Microwave omelette roll, a quick main course made with an omelette cooked in the microwave, then filled and rolled. Just like the beetroot roll or the spinach roll, this recipe can be adapted with many fillings. Many of you have enjoyed the microwave zucchini omelette and the vegetable omelette. I thought this roll would be perfect for the warm season, to be enjoyed cold or warm. I cooked the egg base in the microwave, immediately filled it with robiola cheese, slices of smoked salmon, and mixed greens, rolled the omelette, and wrapped it in plastic wrap. When it cooled down, I cut it into slices. The omelette rolls were a hit when served.

Ingredients for Making the Microwave Omelette

  • 4 eggs
  • 3 tablespoons milk
  • 2 pinches salt
  • 2 pinches pepper
  • 2 sprays extra virgin olive oil
  • 2.12 oz robiola cheese (or other spreadable cheese)
  • 2.82 oz smoked salmon
  • 2.12 oz mixed greens

What You Need

  • 1 Bowl
  • 1 Microwave Tray heat-conducting square or 11-inch diameter
  • 1 Plastic Wrap

Procedure

  • Crack the eggs into the bowl, add the salt, pepper, and milk, and beat quickly with a fork. Spray the tray with oil and pour in the egg mixture.

    Insert the tray into the microwave and cook the omelette for 6 minutes using the microwave + grill function. The omelette will puff up significantly.

  • Remove the omelette from the microwave and spread it with the robiola cheese while it’s still warm. Lay the salmon slices on top, then cover with half of the mixed greens. Roll the omelette and press with your hands. Place the roll on a sheet of plastic wrap and roll it, tightening well. Let the omelette cool for 20 minutes.

  • Unwrap the plastic wrap and slice the omelette roll into slices about half an inch thick. Place the remaining mixed greens on a serving plate and arrange the omelette spirals on top.

Rosella’s Tips

You can store the omelette roll wrapped in plastic wrap in the refrigerator for 24 hours.

Microwave Herb Omelette

Add a mixture of herbs to the eggs, such as parsley, chives, and thyme. Following the same procedure and cooking time, you can make a delicious herb omelette.

Microwave-Cooked Vegetarian Omelette Roll

For a vegetarian version of the roll, you can spread fresh cheese and add fillets of microwave-roasted peppers and sliced Greek black olives.
