Ingredients for the Phyllo Dough and Fruit Cake
- 1 package phyllo dough (about 10 oz from 17 sheets)
- 4 peaches (or nectarines)
- 3 eggs
- 2/3 cup sugar (or erythritol)
- 3/4 cup fresh liquid cream
- 2 drops vanilla essence
- 3 tbsp sunflower oil
- 3 tbsp olive oil
What You Need to Make the Cake in the Microwave
- 1 Microwave Oven with combined microwave+grill or Crisp function
- 1 Non-stick pan for microwave
- 1 Apple Corer
- 1 Bowl
- 1 Small Bowl
- 1 Brush
- 1 Parchment Paper
Procedure
In the small bowl, mix the two oils. Brush the bottom of the pan and then line it with 2 sheets of phyllo dough, folding the excess sheets inward. Lay a sheet of phyllo dough on a surface and brush it with oil, fold the sheet accordion-style lengthwise, and then roll the strip. Place it in the center of the pan, with the folds facing up. Brush another strip, fold it, and wrap the first spiral. Continue like this, until the phyllo dough is finished, if necessary, slightly widen the folds of the phyllo dough.
Wash the peaches, or nectarines, cut them in half, and then remove the pit with the help of the melon baller, slice the peaches and insert them, with the skin facing up, between the folds of the phyllo dough cake.
Beat the eggs with the sugar, or erythritol, add the cream and vanilla essence, and mix well. Drizzle over the phyllo dough and peach cake, letting it fall between the folds of the spiral.
Place the phyllo dough dessert in the microwave and start the cooking with the combined microwave + grill function, for 14 minutes. Cut a sheet of parchment paper, place it on the dessert, and continue cooking for another 3 minutes. This way, the surface will not burn, and the cake will cook evenly.
Let the phyllo dough cake rest in the pan for 10 minutes. This will make it easier to unmold onto a plate. Alternatively, cut it into slices in the pan itself using a silicone spatula.
