Microwave Potato and Zucchini Gratin

The Microwave Potato and Zucchini Gratin is a new recipe from THE GREAT MICROWAVE BOOK, simple to prepare and perfect for the whole family. Soft inside and crispy on top, it wins over with its irresistible aroma and the melting heart of cooked ham and caciocavallo cheese. It is somewhat reminiscent of the MICROWAVE POTATO CAKE we made some time ago, or the MICROWAVE POTATO PARMIGIANA that we have learned to love, although here the pyrex dish comes into play, which can be used both in the microwave and in the oven. Like all the recipes we love in the family, this one too lends itself to a thousand variations: you can replace the zucchini with some microwave broccoli florets. In such a case, cook for 10 minutes. And if you love “fridge-clearout” dishes, the crumble is perfect for giving new life to leftovers, just like our rustic microwave quiche. In a few minutes, you will bring to the table a microwave main course, light but tasty, that will win over both adults and children. The microwave with grill function will do the rest, giving a perfect golden crust and an irresistible texture.

Ingredients

  • 1.65 lbs potatoes
  • 2 zucchini
  • 4.2 oz cooked ham
  • 4.2 oz caciocavallo cheese
  • 3 tbsps Grana Padano PDO (grated)
  • 2 tbsps extra virgin olive oil
  • 2 sprays extra virgin olive oil
  • 3 pinches salt
  • 2 pinches oregano
  • 2 pinches pepper

What to use for the microwave potato and zucchini gratin recipe:

  • 1 Microwave
  • 1 Baking Dish in pyrex
  • 1 Oil Sprayer Oil Sprayer

How to prepare the microwave potato and zucchini gratin:

Wash and trim the zucchini, cut them into small cubes about 1/2 inch on each side. Distribute them in a bowl and add the steamed precooked potatoes. Add 2 tablespoons of grated cheese, salt, pepper, season with oil, oregano, and mix well. Chop the ham and caciocavallo cheese.

  • Spray the baking dish with oil and spread half of the vegetables, leveling them with the back of a spoon. Cover with the ham and caciocavallo cheese. Finish with the other half of the vegetables, compacting and leveling with the back of the spoon. Sprinkle the surface with the remaining grated cheese.

Place the rack in the microwave and set the baking dish on top. Cook the potato and zucchini crumble for 15 minutes with microwave + grill combination function, at maximum power. In the last 5 minutes, check the golden crust on the surface and, if it is already golden, remove the rack and place the baking dish on the base of the microwave and continue cooking.

Once cooking is complete, let it rest for 5 minutes, then cut and enjoy!

Variations of the microwave potato and zucchini gratin:

Depending on the season, you can replace the zucchini with other vegetables, for instance, with broccoli florets precooked with steam along with the potatoes. In such a case, cook for 10 minutes.
