Microwave Potato Flatbread

The microwave potato flatbread, a Ligurian recipe made with thinly sliced potatoes and a batter of milk, flour, and cheese. Its name is frandura and from today you can make it without an oven and in just 20 minutes. Ingredients for the Ligurian Potato Flatbread

  • 6 potatoes (about 1.5 lbs)
  • 2/3 cup milk
  • 1 cup all-purpose flour
  • 2 tbsp olive oil
  • 1/2 cup grated Grana Padano (or Pecorino Romano for a stronger flavor)
  • 2 pinches nutmeg
  • 2 sprigs marjoram
  • 2 pinches salt
  • 2 sprays extra virgin olive oil (for the pan)

  • 1 Microwave oven equipped with combined mode with grill or Crisp
  • 1 Microwave-safe dish heating material, 11-inch diameter

How to Make the Microwave Potato Cake

  • Peel, wash, and thinly slice the potatoes. Gradually drop them into a bowl full of fresh water.

  • While the potatoes soak in water, which will help remove some starch, prepare the batter, mixing all ingredients except for 20 g of cheese and the oil spray you will use to grease the bottom of the microwave dish.

  • Drain the potatoes well and arrange the slices in the dish. Pour the batter over them, using a spatula or spoon to help spread it. Sprinkle the remaining cheese on top. Place the dish in the microwave and start cooking for 20 minutes using the microwave + grill, or Crisp function. If after 13-14 minutes you notice that the surface is browning too much, place a sheet of parchment paper on top and continue cooking.

Extra Tips

The potato frandura cooked in the microwave can be stored for 1, maximum 2 days in the fridge.
