Of course, I couldn’t miss this trend and had to try it cooked in the microwave, in half the time. You know I have always used the microwave and try to speed up cooking times, this collection of microwave recipes is proof of it and, after trying microwave pumpkin, I absolutely had to try this version of microwave pumpkin flatbread. I loved it right away, great just cooked, nice and crunchy, delicious filled, heated and enjoyed like a sandwich… but with half the calories. Ingredients to make the Microwave Pumpkin Cracker
- 7 oz pumpkin (already cleaned)
- 1/2 cup all-purpose flour
- 1/2 cup semolina flour
- 1 fresh scallion
- 1 tablespoon Grana Padano cheese (heaped)
- 1/2 oz inulin (long chain*)
- 2 pinches salt
- 2 pinches nutmeg
- 3.4 oz water
- extra virgin olive oil (spray)

- 1 Mixer
- 1 Bowl
- 1 Hand Whisk
Procedure for Making Microwave Pumpkin Flatbread
Cut the pumpkin into large cubes and distribute it in the mixer bowl. Blend the pumpkin in pulses. Peel and slice the scallion.
Pour the flours into the bowl, add the inulin, salt, and pour in the water. Mix well with the whisk and then add the blended pumpkin, scallion, and nutmeg. Mix the mixture well.
Spray a little oil on the pan and pour in the pumpkin mixture. Level it with a spatula, or the back of a spoon, and spray a little oil on the surface. Place the pan in the microwave and cook with microwave + grill function for 11 minutes. If you can choose, select the most powerful watts. In my microwave, I chose Combi 1 function instead of the less powerful Combi 2. Remove the pan with the pumpkin flatbread, insert the microwave riser and place the pan on it. Continue cooking for another 5 minutes. Before removing the pumpkin flatbread from the microwave, make sure it has dried and a nice crust has formed on the surface.
Your microwave pumpkin flatbread is ready, you can enjoy it just cooked and very hot. Or, let it cool slightly and fill it.
