Microwave Red Lentil Meatballs

Microwave Red Lentil Meatballs one of my new legume recipes, a variant of my Red Lentil Meatballs prepared with peeled red lentils, very easy and really delicious!

After explaining how to Cook Legumes in a Jar, today I want to present you with a different way to use peeled red lentils, which I have already used in other recipes like Spicy Red Lentils in a Jar or Red Lentils in a Jar or the Lentil Dahl in a Jar.

Easy to soak and cook, I decided to use them to make lentil meatballs very quick to cook in the microwave and serve as a main dish or, why not, even as Appetizers.

Ingredients

  • 1 1/4 cups peeled red lentils
  • 1 tsp ginger (grated)
  • 2 sprigs parsley
  • 1 spring onion
  • 1 carrot
  • 1 lemon (juice and zest)
  • 1 tbsp cumin
  • 1 tsp tomato paste
  • 1 clove garlic
  • extra virgin olive oil
  • salt
  • pepper

  • 1 Microwave oven

How to make microwave red lentil meatballs

  • Soak the lentils in a bowl, completely covered with cold water, for 2 hours.

    Once soaked, drain and rinse them under running water.

    Place the lentils in the bowl of a mixer with carrot, spring onion, and parsley.

  • Also add the garlic clove (I used a clove from my Jar Cooked Garlic).

    Add the tomato paste and lemon juice.

  • Then grate the lemon zest and ginger, and season with cumin.

  • Finally add salt, extra virgin olive oil, and pepper.

  • Close the mixer and blend the mixture to obtain a homogeneous puree.

  • With hands slightly greased with oil, take small portions of the mixture and form small meatballs.

    If you want, you can also form the meatballs using an ice cream scoop.

    Place the red lentil meatballs on the crisp tray of the microwave, lightly greased.

    Spray the surface of the meatballs with a little cooking spray, and bake in the microwave on combined microwave+grill function, at maximum power, for 15 minutes.

    Once ready, remove the meatballs from the tray and serve them hot, perhaps accompanied by a Yogurt Sauce or Pepper Sauce.
