Ingredients to make rice with tomato and mozzarella in the microwave
- 1.5 cups Arborio rice
- 1.3 cups tomato sauce
- 1.3 cups water
- 1 pinch salt
- 1 tsp extra virgin olive oil (with basil)
- 5.3 oz mozzarella
- 1 tbsp grated Grana Padano
What You Need
- 1 Rice Cooker for microwave
- 1 Baking Dish ceramic or Pyrex 12×8 inches
- 1 Plastic Wrap for microwave
Procedure
Pour the rice, sauce, and water into the rice cooker. Add a pinch of salt and basil. Stir the rice, close the container, open the valve, and place it in the microwave. Cook for 8 minutes at 600 watts. After cooking, close the valve, shake the container to mix the rice and let it rest for 5 minutes.
While the rice rests, thinly slice the mozzarella. Pour half of the rice into the baking dish and level it with a spoon. Distribute half of the mozzarella and cover with the remaining rice. Top with the remaining mozzarella slices and attach a sheet of plastic wrap to the dish. Make two small holes to allow some steam to escape.
Place the rice dish in the microwave and start cooking for 10 minutes at 800 watts. After cooking, carefully remove the plastic wrap. If desired, sprinkle with grated cheese and grill the rice in the microwave for 8 minutes on the combined microwave + grill function at maximum power (or Crisp). Let the rice rest for 5 minutes in the microwave turned off and then serve.

In this recipe, you can replace mozzarella with provola or scamorza. If desired, you can add diced eggplant sautéed in the microwave or dress it directly with a eggplant sauce in jar cooking. In this case, to add an extra touch of flavor, instead of grated cheese, I would use a nice grating of salted ricotta.
