MICROWAVE SAVORIES here’s the recipe for making savories with phyllo dough, feta, and greens or microwave-cooked spinach in just a few minutes. After trying the microwave spanakopita and the microwave phyllo rolls, I couldn’t resist trying this recipe I saw on Instagram, which was, of course, baked in the oven. Perfect for an aperitif or to serve as an appetizer, these microwave savories are really quick. Ingredients for 8 pieces
- 7 sheets phyllo dough
- 10.5 oz chard (greens or spinach precooked in microwave)
- 5 oz feta
- herbs (basil, parsley, mint, oregano)
- 2 tablespoons vegetable oil
- 1/4 cup water
- 2 teaspoons sesame seeds
What You Need to Cook the Savories in the Microwave
- 1 Microwave Tray heat-resistant material
- 1 Bowl
- 1 Small Bowl
- 1 Brush
- 1 Knife smooth and sharp blade
Procedure
Squeeze the chard well and chop it with a knife, place it in the bowl and add the crumbled feta and chopped herbs. Mix well and check the saltiness, only add salt if necessary.
In the small bowl, emulsify the water with the oil, which you will use to brush the phyllo dough. Lay a sheet on a surface, brush it with a little emulsion and place another sheet on top. Continue like this, until all 7 sheets of phyllo dough are well stacked. Fill one side of the long edge with the filling and roll up to create a long cylinder. Cut into pieces about 1 inch wide, obtaining about 7 pieces. Arrange the savories in the tray, better if lightly brushed with oil and brush their surface with the remaining emulsion. Sprinkle sesame seeds over them, and now the savories are ready to be cooked in the microwave.
Insert the tray with the savories into the microwave and start cooking for 10 minutes with combined microwave + grill, or Crisp function. Towards the end of cooking, check if the rolls are cooking evenly or if they need to be turned.

Serve the phyllo dough and feta savories hot, although they are excellent both warm and cold, perhaps accompanied by a yogurt sauce or an oriental sauce.
