Microwave Stuffed Zucchini

The microwave stuffed zucchini cook perfectly in a few minutes without turning on the stove. Steam pre-cooked zucchini boats in the microwave, then stuffed and cooked in the microwave tomato sauce. For this recipe, instead of white bread crumbs, I used rye croutons, a trick I use to lower the glycemic index. True, they will remain a bit dark, but your health will benefit, and we can enjoy them without guilt. There are many stuffed vegetables that can be made in the microwave, from eggplants to tomatoes, they’re all so quick that you won’t turn on the oven anymore. I also tried the microwave gratin zucchini, but this remains my favorite recipe. Ingredients for Making Stuffed Zucchini in Sauce

  • 3 zucchini (medium, about 6 oz each)
  • 1 cup breadcrumbs
  • 3 slices cooked ham
  • 4 oz scamorza (or provolone)
  • 1 ¾ cups tomato sauce
  • 6 leaves basil

What You Need

  • 1 Container for microwave steaming
  • 1 Microwave Baking Dish in Pyrex or ceramic
  • 1 Bowl
  • 1 Melon Baller for melon

Procedure

  • Wash and trim the zucchini, cut them in half lengthwise. Place the zucchini in the container, slightly salt them, and add 100 ml of water at the bottom. Close the container and cook for 8 minutes at 800 watts.

  • Meanwhile, prepare the stuffing for the zucchini. Pour the breadcrumbs into the bowl, dice the cheese, and chop the ham.

  • Open the container with the steamed zucchini, let them cool slightly, and then, as shown in the picture, scoop out the flesh with the help of the melon baller, without piercing the outer part. Chop the scooped-out zucchini flesh and add it to the breadcrumbs in the bowl, also add a few tablespoons of tomato sauce and the torn basil leaves.

  • Mix the seasoned breadcrumbs well and then, forming large elongated meatballs, stuff the scooped-out zucchini.

  • Place the stuffed zucchini in the baking dish over the tomato sauce, insert the dish into the microwave, and cook the stuffed zucchini for 8 minutes with the combined microwave + grill, or Crisp function.

  • At the end of cooking, let the stuffed zucchini rest in the turned-off microwave and then serve them on a bed of tomato and basil leaves.

  • If you prefer a version without tomato, just place the stuffed zucchini in a microwave baking dish, preferably made of a heat-conductive material. Drizzle with a little oil and cook them in the microwave for 8 minutes, always with the combined microwave + grill function. The Crisp-like material enhances the heat, reaching up to 464°F, ensuring that the stuffed zucchini are nicely browned, even underneath.

More Tips

Microwave-cooked stuffed zucchini can be stored for a couple of days in the refrigerator, in a glass and airtight container.

Round Stuffed Zucchini in the Microwave

With the same recipe, you can also make round zucchini. I usually prefer to make them in the Craftina and without tomato. I use the pot with the lid to pre-cook the zucchini, then scoop them out, fill them, and cook them without the lid, with a drizzle of oil for 10 minutes with the combined microwave + grill function.
