The microwave two-tone cake, dear readers, also surprised me. A microwave cake perfectly cooked, well-risen, fluffy, just like one baked in a traditional oven. Like the microwave yogurt cake and the microwave apple cake, this microwave cake will also cook in about 15 minutes. Today, it’s possible to cook energy-efficiently without sacrificing recipe success and taste, and with my microwave recipes, I hope to convey that to all of you. As I explain in my book The Great Microwave Book (ed.Gribuado), you have to be careful with all those cakes on the web “that cook in 1 minute,” because it’s in the power used to cook the microwave cakes and desserts that the trick lies to have microwave-baked desserts that remain fluffy even after cooling. Today, I decided to update the recipe to offer you a two-tone cake without butter, with the same base you can also experiment with making a hug cake or a zebra cake in the microwave.

Ingredients for the White and Chocolate Cake
- 3 eggs
- 1 cup cup sugar
- 1/2 cup cup yogurt (plain – even Greek)
- 0.4 cup cup milk
- 2/3 cup cup vegetable oil (or for microwave)
- 1 2/3 cup cups all-purpose flour
- 1 pinch salt
- 1 packet baking powder
- 2 tbsp tbsp all-purpose flour
- 2 tbsp tbsp unsweetened cocoa powder
- Baking spray
What You Need to Make the Microwave Cake
- 1 Microwave Oven combi or with Crisp function
- 1 Microwave Pan heating material 10-inch
- 2 Bowls
- 1 Electric Whisk
- 1 Sieve fine mesh
- Parchment Paper
- 1 Toothpick
Procedure
Crack the eggs into a bowl, add the sugar, and whisk well until a light and frothy consistency is achieved. While continuing to whisk, slowly add the oil, yogurt, and milk, add the pinch of salt, and continue to whisk. Remove the whisk and sift with a sieve the 1 2/3 cups of flour and the baking powder, and incorporate them well into the mixture using a spatula or a spoon.
Divide the mixture in two, pouring half into another bowl. In one, add the 2 tbsp of flour, and in the other, the 2 tbsp of cocoa, and incorporate them completely. This way, the bases of the two-tone cake will have the same density. Spray the pan with baking spray; alternatively, you can grease and flour it.
Pour the white base into the pan, and then pour the chocolate base on top. Use a skewer to mix the two mixtures, creating spirals.
Place the cake in the microwave and start cooking for 12 minutes with the combined microwave + grill function, selecting, if possible, a reduced power. After 12 minutes, place a sheet of parchment paper on the cake and continue cooking for another 3 minutes. At the end of cooking, do the toothpick test, as you would with baking in the oven, and if necessary, continue cooking for another couple of minutes, always with parchment paper. This way, the cake won’t burn on top. Remove the two-tone cake from the microwave and, as soon as possible, transfer it to a wire rack to cool.
Extra Tips
If you prefer, you can replace the oil with an equal weight of melted butter. The two-tone cake keeps for 2-3 days at room temperature. To help maintain the cake’s moisture, once placed on the rack while still warm, cover it with a sheet of plastic wrap.
Sugar-Free Two-Tone Cake
For a healthy and equally good version of the two-tone cake, replace the sugar with an equal weight of erythritol and mix 25 g of long-chain inulin with the flour.
