After trying the microwave zucchini omelet, the microwave rice omelet and the microwave ricotta omelet, I wanted to try this version of the omelet with mixed vegetables, cottage cheese, and eggs, cooked in the microwave. The result is truly appetizing and light. For the recipe, just wilt the vegetables in the microwave, beat them with the eggs and cottage cheese, and then cook the omelet in the heating pan for the microwave; it was a real discovery for me. Ingredients for making the vegetable and cottage cheese omelet
- 2 zucchini (about 2 cups)
- 10 cherry tomatoes
- 1 tablespoon extra virgin olive oil (with basil)
- 4 eggs
- 1.5 cups cottage cheese
- 2 pinches salt
- 2 teaspoons grated Grana Padano
- 2 sprigs parsley
What you need to make the omelet in the microwave

- 1 Pan microwave heating
- 1 Bowl
Procedure
Wash and trim the zucchini, cut them into regular cubes, and put them in the microwave pan. Wash and cut the cherry tomatoes in half, add them to the zucchini along with the basil-flavored oil and a pinch of salt. Mix and cook the vegetables in the microwave for 10 minutes at 800 watts.
Crack the eggs into the bowl, lightly salt, pepper, and add the washed and chopped parsley. Beat quickly, add the cottage cheese, and mix well.
Add the precooked vegetables to the eggs, grease the bottom of the pan itself, and pour in the egg and vegetable mixture. Sprinkle the surface with grated cheese and cook the omelet with vegetables in the microwave for 12 minutes, using the combined microwave + grill function, selecting the lower power. This way, the eggs have time to cook without tearing or drying out.
Serve your omelet; it’s great hot, warm, or cold.
