Microwave Yogurt Cake

Microwave Yogurt Cake is a dessert that truly impressed me, a new recipe to add to my collection of Microwave Recipes, very easy and delicious to make, perfect for when guests arrive and you want to impress them with a very tasty and customizable microwave-baked cheesecake.

Did you know that with all my Microwave Dessert Recipes I try to simplify my life, but also yours, using few ingredients and cooking it in the microwave to save time while still achieving a very delicious and creamy dessert!

This recipe also adds to the Recipes with Craftina for the Microwave, a tool I find very useful and essential in the kitchen if you want to cook with the microwave!

After my Yogurt Dessert in a Jar, the Chocolate and Yogurt Mousse, and the Microwave Yogurt Cake, I decided to create this microwave yogurt cake which resembles, in texture, the New York cheesecake but is prepared with Greek yogurt and erythritol, making it lighter and perfect for those trying to limit sugar in their diet.

Ingredients

  • 1 1/4 cups Greek yogurt
  • 1/2 cup erythritol
  • 1/4 cup cornstarch
  • 3 eggs
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1 lemon (zest)

What You Need to Cook the Yogurt Cake

  • 1 Microwave oven
  • 1 Pan craftina

How to Prepare the Microwave Yogurt Cake

  • Crack the eggs and separate the yolks from the whites.

    Beat the egg whites until stiff peaks form using the electric mixer.

  • Place the yolks in a separate bowl and add the erythritol.

    Quickly beat with the mixer.

    Then add the vanilla extract and lemon zest.

  • Add the Greek yogurt to the bowl with the yolks and mix with the mixer.

  • Also add the cornstarch and baking powder and mix to blend the cream.

    Finally, add the whipped egg whites and fold them in gently from bottom to top with a spatula to avoid deflating them and to create a light batter.

  • Butter and flour the craftina and pour the mixture into it.

    Cook in the microwave using the combi-2 function for 15 minutes.

    Cover the yogurt cake with a sheet of parchment paper to prevent the surface from browning too much and continue cooking for another 8 minutes.

  • Once cooked, let the yogurt cake cool completely before flipping it onto a serving plate.

    Dust the surface with some powdered sugar and serve with jam or topping of your choice.

Store the microwave yogurt cake in the fridge for up to 3 days.
