Ingredients

  • 3 eggs
  • cup sugar
  • cup 2% fat Greek yogurt
  • cup extra virgin olive oil (or seed oil)
  • 2 cups all-purpose flour
  • 1 pinch salt
  • 1 packet baking powder
  • 2 teaspoons vanilla extract
  • vegetable oil (for the pan)
  • all-purpose flour (for the pan)

What you need to cook the cake in the microwave

  • 1 Microwave oven
  • 1 Microwave baking pan heating material from 8 inches
  • 1 Bowl
  • 1 Electric whisk

Method

  • Break the eggs into a large bowl, add the sugar and whisk the mixture. Once the eggs are pale and foamy, gradually add the yogurt and oil, continuing to whisk until everything is well combined. Add to the whipped cream: the vanilla, salt, baking powder, and flour sifted with a fine-mesh sieve. Fold the dry ingredients into the egg and yogurt cream, using a spatula.

  • Brush the pan with oil and then dust it with flour, removing the excess. Pour the cake batter and level it. Insert the pan into the microwave and start cooking for 13 minutes with a combined microwave + grill function, selecting a lower power.

  • After the cooking time, do the toothpick test to check if the cake is cooked inside. If not, place a sheet of parchment paper over the cake and continue cooking for another 3-4 minutes.

  • With the help of a glove, flip the yogurt cake onto a plate, place the rack on top, and turn the cake. Let it cool slightly, then serve.

Sugar-Free Microwave Yogurt Cake

Instead of sugar, use erythritol and mix with the flour 30 g of long-chain inulin, which will regulate the glycemic load.
