Mixed vegetables in an air fryer, a side dish made of braised vegetables in the air fryer. Great as a side dish, perfect for stuffing a puff pastry with vegetables in the air fryer and, like these vegetable rolls in the air fryer, it’s a light recipe cooked with very little oil. To make the vegetables in the air fryer I used: zucchini, bell peppers, cherry tomatoes, and red onion. The result was similar to a ratatouille in the air fryer. Depending on what you have available, you can also use eggplants, green peppers, and other seasonal vegetables.

Ingredients
- 1 bell pepper (about 300 g)
- 2 zucchini
- 250 g cherry tomatoes
- 1 Tropea red onion
- 2 tablespoons extra virgin olive oil (or garlic oil)
- 2 pinches salt
- 1 bunch aromatic herbs (oregano, basil, thyme)
What You Need
- 1 Air fryer
- 1 Baking tray
- 1 Cutting board
- 1 Knife
Procedure
Wash, trim, and clean the vegetables. Cut them into even pieces and place them in the tray that can be inserted into the air fryer basket. Distribute the vegetables and season with salt and oil. Mix well.
Insert the tray into the air fryer and cook at 410°F for 18 minutes, stirring the vegetables after 10 minutes. This way you’ll have even cooking.
Flavor the vegetables to your liking with the aromatic herbs, mix them, and serve them on a platter.

Be sure to choose an air fryer free of BPA and PFOA, with a power greater than 1700 watts, that reaches up to 450°F. This way it will last a long time and be much more efficient, significantly reducing cooking times. Particularly for vegetables, which will not have time to release their water, remaining firmer and meatier.
