Ingredients for Mussel and Bean Soup in Jar Cooking

  • 10.5 oz mussels (frozen shelled only)
  • 8.5 oz canned borlotti beans (drained weight)
  • 7 oz peeled tomatoes
  • 2 cloves garlic (small)
  • 1 chili pepper
  • 2 tbsp extra virgin olive oil
  • 2 sprigs parsley
  • 2 tsp tomato paste (optional)
  • 2 pinches salt (optional)

  • 2 Jars 500 ml with thin seal

How to Make the Jar Cooking Mussels with Beans Recipe

  • Peel the garlic cloves, chop them and distribute them in the tray or bowl. Add the chopped chili pepper and the oil. Sauté for 1 minute at the microwave’s highest power. Add the peeled tomatoes to the sauté and mash them with a fork. Season to taste with salt and add the mussels, borlotti beans, and washed and chopped parsley.

  • Distribute everything into the 2 jars, then clean the edges, close, and clamp. Place one jar in the microwave and start cooking at the power indicated by the water test, I use 600 watts, for 6 minutes. At the end of cooking, remove from the microwave and cook the second jar.

    At the end of cooking, let the closed jars rest for at least 20 minutes, or until consumption.

  • During the rest, the jars will finish cooking and a vacuum will form allowing you to store the jar-cooked mussels with beans for 15 days in the refrigerator.

  • You can serve the soup directly in the jars, accompanied by slices of toasted bread. If you want to serve it as an appetizer, you can distribute it in small bowls and enrich it with chopped parsley and diced toasted bread. Alternatively, you can use it as a sauce and dress spaghetti or artisanal maccheroncini.

If you have leftover fresh mussels, you can use them instead of frozen ones and cook each jar for 5 minutes instead of 6. Instead of borlotti beans, you can use pre-cooked cannellini beans.
