Ingredients
- 3 1/2 oz erythritol
- 1/3 cup low glycemic index flour
- 3 1/2 tbsp vegetable oil
- 4 eggs (large and at room temperature)
- salt
- 1 orange
- 7 oz ricotta
- 1/2 cup heavy whipping cream
- 2 3/4 oz erythritol
- 1 orange (zest)
What you need to make the microwave orange roll
- 1 Dish crisp
- 1 Baking Pan crisp
How to prepare the orange roll
Wash an orange.
Slice it thinly and place the slices on a crisp plate.
Sprinkle the orange slices with a little granulated sugar, then cook them in the microwave on combined function at maximum power for 12 minutes.
Once cooked, take them out and let them cool.
Crack the eggs and separate the yolks from the whites.
Collect the egg whites in a large bowl and add the sugar.
Add a pinch of salt and then whip the ingredients until you achieve a fluffy and very swollen mixture.
Start adding one yolk at a time to the mixture, always stirring with the electric whisk.
When the first yolk is absorbed by the mixture, continue adding the remaining yolks, one at a time.
When you have finished incorporating the yolks into the mixture, add the sifted flour last.
Mix from bottom to top with a spatula so as not to deflate the mixture.
Place a sheet of parchment paper on the square crisp baking pan.
Arrange the caramelized oranges on the bottom of the pan.
Pour the mixture over the oranges and level it with a spatula.
Place the pan on the lower part of the microwave.
Set the microwave on combined function microwave + grill, close the door, and start cooking for 7 minutes.
The orange sponge will be cooked when it is golden brown on the surface.
Once cooked, take it out, turn it over onto a clean towel, and immediately remove the parchment paper while it’s still warm.
Cover with plastic wrap and let cool.
Prepare the cream to fill the orange roll: in a bowl, mix the drained ricotta with the sugar and the orange zest.
Whip the cream until stiff peaks form and add it to the cream, mixing from bottom to top to avoid deflating it.
Remove the plastic wrap from the sponge cake and spread the cream over the roll base, leaving the caramelized oranges on the outside.
Level the cream with a spatula, then roll the sponge cake with the help of its parchment paper and refrigerate to rest for at least an hour.
Serve the orange roll in slices.

The orange roll can be stored in the refrigerator for up to 2-3 days.
