Peanut Butter Protein Cookies

Peanut Butter Protein Cookies are delicious treats to add to my collection of Sweet Recipes, cookies prepared in just a few minutes that you can bake in a traditional oven, microwave, or air fryer.

After buying a good amount of almond flour to prepare my Almond Shortcrust Pastry, I decided to use some of it to make these egg-free and lactose-free peanut butter cookies.

Ingredients

  • 1 cup cup peanut butter
  • 1 1/4 cups cup almond flour
  • 1/3 cup cup maple syrup (or agave syrup)
  • 1 pinch salt

How to Make Peanut Butter Protein Cookies

  • Place the almond flour in a large bowl.

    Add the peanut butter and maple syrup.

    Mix everything with a spoon to obtain a soft dough, sticky but well combined.

  • With an ice cream scoop, or using slightly damp hands, scoop out pieces about 0.8 oz and place them on a baking sheet lined with parchment paper.

    To shape them, I decided to create lines with the tines of a fork.

    Proceed in the same way until the dough is finished.

  • Once you have finished preparing the cookies on the baking sheet, you can decide how to bake them.

    You can bake the peanut butter protein cookies in a preheated static oven at 350°F for about 10/12 minutes.

    Alternatively, you can bake them in an air fryer at 340°F for 8/10 minutes.

    Or, in the microwave using the combined microwave+grill function for 12 minutes.

    Once baked, let them cool completely before serving them with melted dark chocolate.
