How to Prepare the Piedmontese Appetizer in Jar Cooking
Peel the red onion, chop it very finely with a knife and collect it inside a bowl.
Add a good drizzle of extra virgin olive oil and a pinch of salt.
Sauté the onion in the microwave at 1000W for 2 minutes.
Prepare the seasoning for the Piedmontese appetizer in jar cooking.
When the onion is sautéed, add the canned tomatoes. Mash them with a fork then add the salt and the sugar.
Also add to the seasoning the vinegar and the white wine.
Lastly, add also the green olives. Give a good stir to blend and uniform all the ingredients.
Now dedicate yourself to preparing the vegetables: wash and clean all the vegetables.
Cut the green beans, carrots, and red peppers into small and regular pieces.
Do the same with the yellow peppers and the celery stalk.
Then add them to the cauliflower reduced to florets and the small onions.
Mix them in a bowl and distribute them in the 4 Fido jars of 2 cups.
Distribute the seasoning evenly in the 4 jars.
Clean the edges of the jars, close and latch.
Cook each jar at your tested power for 5 minutes, then continue cooking for another 5 minutes at reduced power. (For me 600 W tested power and 440 W)
Once you have cooked each jar, let them rest for at least two hours.
The jars of Piedmontese appetizer in jar cooking can be stored in the fridge for a month.
When you want to enjoy/serve the Piedmontese appetizer, take the jar out of the refrigerator and unlatch the lid. Place the jar in the microwave and start first for 2-3 minutes with defrost function, to acclimate the glass, then restart at half power for 3 minutes.
