Pork Chops in Sauce in the Microwave

Pork Chops in Sauce in the Microwave is a new recipe added to the Microwave Main Courses, a faster version of the classic recipe that doesn’t take away from the taste and tenderness of the meat. The chops, also known as brasciole, are a typical Southern recipe, not to be confused with the Chops. Despite their name, the chops in sauce are meat rolls with fillings.

This recipe is from my book, The Great Book of Microwave and I had the pleasure of presenting it at the microwave cooking course I taught in Latina. The next day, at the microwave jar cooking course, I made them prepare the Jar Cooked Chops, in this case using fairly thin beef slices, whereas, if the slices are very large, I can prepare the Falsomagro in Jar Cooking.

All the Microwave Recipes are quick and, contrary to what one might think, the results are excellent. My motto in life is, it depends. Many times I read about people speaking negatively about microwave cooking, and then I think, it depends. It depends on how you use it, and there are many tricks to learn to cook well in the microwave.

Ingredients for making the chops

  • 6 slices beef (thin and about 2 oz each)
  • 3 hard-boiled eggs
  • 6 oz stale bread
  • 1/2 cup milk
  • 3.5 oz caciocavallo cheese
  • 3 slices cooked ham
  • 1.75 oz pecorino romano (grated)
  • 1 clove garlic
  • 2 sprigs parsley
  • 2 pinches salt
  • 2 pinches pepper
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons white wine
  • 1 red Tropea onion
  • 2 cups ml tomato puree
  • 1 tablespoon extra virgin olive oil
  • 1 leaf bay leaf
  • 2 pinches salt

What you need to make the chops in sauce in the microwave

  • 1 Microwave Oven better if with combined or Crisp function
  • 1 Baking Dish ceramic or Pyrex
  • 1 Microwave Baking Dish heat conductive similar to Crisp
  • 2 Bowls
  • 1 Plastic Wrap for microwave
  • Cooking Twine

How to make the chops in sauce in the microwave

  • Dice the stale bread, place it in a bowl, and soak it in the milk. Mix it and let it rest for 10 minutes.

  • Peel, wash, and chop the onion, distribute it in the bowl, and season with a pinch of salt and the oil. Sauté for 2 minutes at 1000 watts. Add the tomato puree, the bay leaf, and mix. Cook the sauce for 7 minutes at about 600 watts.


    While the tomato sauce cooks, flavor the softened bread with the peeled and chopped garlic clove, the washed and chopped parsley, pecorino, and pepper. Knead well until you get a uniform mixture. Chop the caciocavallo and the cooked ham, peel the hard-boiled eggs, and cut them in half lengthwise.


  • Place 3 slices of meat on a cutting board, fill each slice (as in the photo) with a bit of bread, the caciocavallo, the ham, and place half an egg on top. Roll up the meat, folding the outer edges inward, thus obtaining large meat rolls. Tie each roll with cooking twine, proceed this way until the ingredients are finished. Arrange the chops in the heating tray, season them with the 2 tablespoons of oil, and turn them to coat them evenly. Sauté the chops for 4 minutes with combined microwave+grill function, at maximum power. Moisten them with the white wine and continue for another 2 minutes.

  • Distribute half of the tomato sauce in the tray, arrange the chops, and add their cooking juices. Cover them with the other half of the tomato sauce. Seal the tray with a sheet of plastic wrap and make 2 small holes. Cook the chops for 20 minutes at 600 watts. As soon as they are cooked, cover everything with another sheet of unholed plastic wrap and let the chops rest for 10 minutes. In this way, they will continue cooking at low temperature and a sort of vacuum will form. Afterwards, remove the plastic wrap, heat the chops in sauce for a few minutes if necessary, and serve.
