Pumpkin cooked in a jar is the perfect base to become a side dish, filling for savory pies, or stuffed pasta. A simple recipe, but simplicity is the strength of jar cooking in the microwave.
Like sweet and sour pumpkin and jar-cooked pumpkin parmigiana, this recipe also cooks in a jar in the microwave. As many of you may know, all foods cooked in a jar will have an enhanced flavor, as well as being a cooking method that retains vitamins and nutrients. The pumpkin cooked in a jar will cook in just 5 minutes and you can store it for 15 days, thanks to the vacuum seal. I propose this recipe flavored with nutmeg and garlic, but if you prefer, you can cook the pumpkin plain and then use it for any recipe your imagination inspires.
I added croutons to a jar of pumpkin, cracked in 2 eggs, placed the glass lid on, and cooked in the microwave until the egg white set. I obtained a unique dish that I could enjoy in just a few minutes.

How to Cook Pumpkin in a Jar
Cut the pumpkin into large cubes. Distribute the pieces in the jar and season with salt, the whole clove of garlic, nutmeg, and oil.
Clean the rim of the jar, close, and clip. Set the microwave to the highest power* (mine is at 900 watts), place the jar inside, and start cooking for 5 minutes.
At the end of cooking, let the closed jar rest for 20 minutes. Once the jar is at room temperature, you can store it in the refrigerator and/or open it as per instructions.
Rosella’s Tips…
Using the maximum power of the microwave and the use of thin-seal jars will allow the liquids that form in the jar to evaporate, resulting in drier pumpkin.
