  • 1 clove garlic
  • 1 tsp salted capers
  • 1 salted anchovy
  • 5 green olives (pitted)
  • 5 black olives (pitted)
  • 1 chili pepper
  • 1 tsp chopped parsley
  • 1 tbsp extra virgin olive oil
  • 1 pinch salt

  • 1 Jar 500 ml with thick gasket
  • 1 Small glass bowl
  • 1 Knife

How to make sauce in a jar

  • Soak the capers in fresh water. Wash and fillet the anchovy. Slice the chili pepper and peel the garlic. Put in the small bowl: garlic, chopped anchovy, and chili pepper, add the oil and sauté for a minute at the highest power of your microwave. To avoid unpleasant splashes, you can place a microwave splatter cover over the bowl.

  • Distribute the sautéed mixture in the jar, add the olives, parsley, squeezed capers, salt, and tomato. Mix well with a spoon, clean the rim of the jar, close and clasp it.

  • Set the microwave to your tested power (I use 600 watts), insert the jar, and start cooking for 6 minutes. At the end, let the closed jar rest for at least 20 minutes. During this time, the sauce will finish cooking and a vacuum will form. Once at room temperature, you can store it in the refrigerator, where it will keep for a month. Tips for making jar-cooked sauces

In order for jar-cooked sauces to keep for a month, remember to use new gaskets and jars with thick gaskets. Once the sauce is cooked, it can remain outside the fridge for 24 hours, provided the outside temperature is not too high.

Remember that to open vacuum-sealed jars, as stated in the instructions, you just need to put them in the microwave, unclasped, and start at the tested power for about 3 minutes or until opened. If cold from the fridge, it’s advisable to bring the glass to room temperature to avoid thermal shock, using the defrost function for about 3 minutes.
