Red Cabbage in Jar Cooking

Ingredients for Cooking Red Cabbage in a Jar

  • 1.8 lbs red cabbage
  • 2 teaspoons coconut sugar (or brown sugar)
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons white wine vinegar (or apple cider or balsamic vinegar)
  • 4 pinches salt

Tools for the Recipe

  • 1 Jar 1 liter
  • 1 Jar 750 ml

Procedure

  • Remove the leaves of the red cabbage and wash them well. Drain them well and cut them into strips. Divide the red cabbage into the 2 jars, pressing it well and filling to the brim. Season with sugar, salt, vinegar, and oil.

  • Set the microwave to your power, I set it to 600 watts, place the 1-liter jar and cook for 12 minutes. At the end, let the closed jar rest for at least 20 minutes. Meanwhile, cook the 750 ml jar for 9 minutes and at the same power.

    Once cooled, you can store the jars in the refrigerator, up to 15 days. To enjoy them, just unlatch, put the jar in the microwave, and start until it opens. For the 1-liter jar, it will take about 6 minutes, while the 750 ml jar will open in about 5 minutes.

    If you prefer, once it has cooled slightly, you can open the jar by pulling the gasket, provided you are using Weck jars.
