Rice Casseroles in Air Fryer

Rice casseroles in air fryer another one of my Air Fryer Recipes, prepared with Carnaroli rice cooked in the microwave, but if you want, you can also use Brown rice cooked in a jar in the microwave.

The rice casseroles are prepared with the same mixture as the Microwave Tomato Rice Casserole, but since they are single servings, they are perfect to serve as an appetizer, or they can be easily frozen and brought to the office for lunch.

Ingredients

  • 2 1/3 cups water
  • 1 1/4 cups rice
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • salt
  • 2 cups tomato sauce
  • 9 oz frozen peas
  • 4 leaves basil

  • extra virgin olive oil

How to Prepare Rice Casseroles in Air Fryer

  • Put the Carnaroli rice in a microwave rice cooker.

    Add a teaspoon of salt for seasoning.

    Pour in the water and stir with a spoon to combine the ingredients.

  • Close the container with its lid.

    Leave the valve open and cook in the microwave for 14 minutes at 600 W.

    After cooking, close the valve and let it rest for the time needed to prepare the sauce.

  • Wash, clean, and slice a green onion very thinly.

    Place the sliced onion in a microwave heating pot and add a generous drizzle of extra virgin olive oil.

    Add a peeled garlic clove with the central part removed.

    Sauté in the microwave at 1000 W for 2 minutes.

  • Add the frozen peas and salt to taste.

    Stir and sauté the peas along with the seasoning for 4 minutes at 1000W.

    Finally, add the tomato sauce and basil leaves.

    Stir to distribute the ingredients, then close the pot with its lid and cook for another 10 minutes at 1000W.

  • When the tomato and pea sauce is cooked, open the lid, remove the garlic clove and pour half of it into a large bowl.

    Add the previously cooked rice and stir.

    Once all the rice is mixed, distribute the seasoned rice into the muffin molds.

    You can add a cube of provolone or scamorza in the center of each rice casserole.

    Cook the casseroles in the air fryer for 12 minutes at 356°F.

    When the rice casseroles in the air fryer are cooked, take them out and let them cool slightly before serving them.

How to Store Air Fryer Cooked Rice Casseroles

Rice casseroles cooked in the air fryer can be stored in the fridge for 3 days. If you want, you can freeze them before cooking, then cook them directly in the air fryer, still frozen, for 5 minutes at 212°F, then for another 12 minutes at 356°F.
