Tips for Cooking Free-Range Chicken in the Pressure Cooker
With the same recipe, you can make cut-up free-range chicken, rabbit, and capon.
I chose the Livornese-style rooster recipe; if you prefer, you can use the ingredients to make hunter’s chicken, maybe adding wedges of potatoes or peas, for a one-pot dish.
If you have a classic pressure cooker, use the same cooking times, just make sure to lower the flame as soon as it starts whistling.
