Lettuce Soup
Peel and dice a potato, a spring onion, a piece of Grana Padano rind, and put them in a saucepan. Cover with water and cook for 10 minutes. Meanwhile, wash and cut 8 lettuce leaves into pieces, add them to the potatoes, and add 1/2 cup (about 3.5 oz) of rice for soup. Salt and cook the rice, stirring occasionally. At the end of cooking, serve on plates, adding a tablespoon of oil, one of grated cheese, and 2 basil leaves. Serve.
