- 2.82 oz Sicilian anelletti
- 0.4 cup ragù
- 0.34 cup water
- 0.7 oz frozen peas
- 1.06 oz primosale (or mozzarella)
- 1.06 oz caciocavallo
- 1 pinch salt
- 2.82 oz Sicilian anelletti
- Half black oval eggplant (diced and browned)
- 0.42 cup tomato sauce
- 1 tbsp extra virgin olive oil
- 1.41 oz sheep ricotta
- 0.35 oz salted ricotta (homemade)
- 1 pinch salt
What You Need
- 1 Microwave oven
- 1 Jar 500 ml with thin gasket
Recipe for Jar Cooked Aneletti
Distribute the ragù in the jar, add the aneletti, peas, water, and mix.
Cut the primosale into cubes, chop the caciocavallo and add it to the aneletti, along with a pinch of salt. Mix again and then clean the edge of the jar.
Place the jar in the microwave and cook for 4 minutes at reduced power, I used 440 watts compared to the tested 600. Protect your hands with a cloth, shake the jar to mix the aneletti, and continue cooking for another 2 minutes.
After cooking, let the closed jar rest for 20 minutes, shaking the jar occasionally.
For the eggplant version, just add all the ingredients to the jar and proceed with cooking as above.
Extra Tips
If you don’t feel like frying and making a mess in the kitchen and/or want a lighter version. Dice the eggplant, distribute them in a crisp tray, season with a little oil, mix them, and cook for 12 minutes. You can use the Crisp function or the microwave + grill function.
How long can I keep the aneletti in the closed jar?
Jar-cooked aneletti should be consumed within 24 hours, storing the jar in the refrigerator once it is at room temperature and a vacuum has formed.
