Squid and Beans in Jar Cooking

The squid and beans in jar cooking that I present to you today are a real delicacy. A recipe taken from my first book: Easy Jar Cooking (ed. Gribaudo). Excellent to serve warm, like a squid and bean salad, or to enjoy hot, perhaps accompanied by garlic bread crostini.
This recipe was designed to be served as a jarred appetizer, dividing into 4 small bowls, or, if you prefer, you can serve it as a main dish, using one jar per person.
Like all my jar cooking recipes, this one cooks following the jar cooking instructions, in a few minutes and, thanks to the vacuum seal, it can be stored for 10 days in the refrigerator.

  • 1 cup cup pre-cooked white beans
  • 1/2 lb lb squid (already cleaned)
  • 1 anchovy in salt
  • 1 1/4 red onion
  • 1 clove garlic
  • 2 sprigs parsley
  • 2 tablespoons extra virgin olive oil
  • 2 pinches salt
  • 2 pinches pepper

What You Need for Squid with Beans in Jar Cooking

  • 1 Microwave
  • 2 Jars 500 ml with thin gasket
  • 1 Knife
  • 1 Cutting board

How to Make the Squid with Beans in Jar Cooking Recipe

  • Chop the onion, garlic, and cleaned, boned anchovy. Transfer everything into a small bowl, add the 2 tablespoons of oil and sauté for a minute at 750 watts. Divide the sautéed mixture into the 2 jars and distribute half of the beans, half of the squid, the washed and chopped parsley, salt, and pepper in each.

  • Mix the contents well, clean the rims of the jars, close, and clamp shut*. Set the microwave to your power (I use 750 watts), insert a jar, and start cooking for 5 minutes. Upon completion, let the jar rest closed for 20 minutes, and in the meantime, cook the other jar.

  • Once at room temperature, you can store the jars in the refrigerator for 10 days. When you want to serve them, proceed as follows: release the clasp, place the jars in the microwave, set to defrost mode for a few minutes to acclimate the glass, then proceed for a few more minutes at your power until reaching the desired temperature.

* I remind you that for my type of jar cooking, it is necessary to use 4 clips per jar to ensure the lid’s seal while the jar is under pressure.

Variations for Squid with White Beans in Jar Cooking

For a fresher taste, you can add lemon zest and, if you like, instead of parsley, use thyme and timut pepper.
