Ingredients for Sweet and Sour Peppers in a Jar

  • Half bell pepper (approximately 8 oz)
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons white wine vinegar (or apple cider vinegar)
  • 1 teaspoon sugar (preferably erythritol or coconut)
  • 1 pinch salt

What you need to cook in a jar in the microwave

  • 1 Microwave oven
  • 1 Jar 500 ml with thin gasket

Procedure

  • Wash the bell pepper thoroughly, remove the filaments and seeds, and then cut it into regular pieces. Distribute the bell pepper in the jar and add the salt, sugar, oil, and vinegar.

  • Clean the edges of the jar; this will ensure that small food particles do not prevent the vacuum from forming, close and clasp as per the instructions. Place the jar of sweet and sour peppers in the microwave and start cooking for 6 minutes at your tested power, I use 600 watts.   • At the end of the cooking, remove the jar from the microwave and let it rest closed for 20 minutes. The resting time will complete the cooking of the peppers, and a vacuum will form in the jar. Thanks to this, you can store it for 15 days in the refrigerator.

Microwave jar cooking is a combined technique between microwave and steam. This results in a small amount of liquid forming inside the jar: from the vegetation of the vegetables and water vapor. For this reason, I recommend using jars with thin gaskets to cook the vegetables; there is more vapor dispersion, and the vegetables remain firmer.
