How to Make Sweet and Sour Pumpkin in a Jar
Peel and slice the pumpkin into even slices and grill them for a few minutes. Alternatively, you can fry them in olive oil. Blend the breadcrumbs with the washed mint, peeled garlic cloves, cheese, salt, and pepper. Add the oil to the breadcrumbs and blend for a few seconds. Place two slices of pumpkin at the bottom of a 500 ml jar, sprinkle with two teaspoons of breadcrumbs, and drizzle with a teaspoon of vinegar. Continue with another layer of grilled pumpkin and one of breadcrumbs. Finish with another layer and a teaspoon of vinegar. Clean the rim of the jar well and close it with the lid, clips, and gasket.
Set the microwave to your tested power (I use 600 watts) for 5 minutes, insert a jar, and start cooking.
Meanwhile, prepare the other pumpkin jars. Remove the jar from the microwave and let it rest closed for at least twenty minutes, the liquid that forms will dry during the rest, cooking will finish, and a vacuum will be created. Cook the other jars in the meantime.
Now you can decide whether to pull the gasket and serve it or put it in the fridge, where it will keep for 15 days. If you want to open the jar in the microwave, just unclip the jar, place it in the microwave, and start at the same power you used to cook.
