Ingredients to make jar-cooked tomato rice
- 4.6 oz cherry tomatoes (or other ripe tomato)
- 1/2 cup Basmati rice
- 1/3 cup water
- 1 clove garlic
- 1 tbsp extra virgin olive oil (do not use garlic if flavored oil is used)
- 1 pinch salt
- fresh herbs (thyme, basil, oregano)

- 1 Jar 500 ml with thin gasket
Procedure
Wash the cherry tomatoes, cut them into 3-4 pieces, and let them fall directly into the jar. Wash the rice 3 times using a fine-mesh sieve, distribute it in the jar, and add the fresh herbs, oil, garlic, salt, and pour the water over it.
Stir the tomato rice well in the jar, then clean the edges, close, and clip. Place the jar in the microwave and start the first cooking step for 4 minutes at intermediate power, I used 440 watts out of 600 watt power provided by the water test. After the first cooking step, using a cloth to protect your hands, grab the jar and shake it on a flat surface, this way you will mix the cereal in the jar. Continue cooking for another 3 minutes, always at reduced power.
Once the jar-cooked tomato rice is cooked, let the closed jar rest for 20 minutes, shaking it occasionally.
Now your tomato rice is ready. You can remove the clips and open it in the microwave, as written in the instructions for jar cooking in the microwave, or if the rice’s temperature is ideal for you, pull the gasket. Stir well and serve.

Can I store the jar-cooked rice for a long time?
Many of you ask me this… and my response is that it all depends on your taste. Technically, rice and pasta recipes would last for 10 days in the refrigerator and vacuum-sealed. The issue is that starches continue to “cook” even when cold, which could lead to overcooking. If you like slightly overcooked rice or have this requirement, then you can store rice for a long time.
