So after sauces made with meat like Microwave Jar Cooking Ragù or White Ragù in Jar Cooking, I decided I had to find a vegetarian or vegan alternative to my Amatriciana Sauce in Jar Cooking. And here it is! Ready in minutes and made with smoked tofu that gives the typical Amatriciana flavor!

Ingredients

  • 14 oz peeled tomatoes
  • 6 oz smoked tofu
  • Half onion
  • Half teaspoon smoked paprika
  • Half teaspoon unsweetened cocoa powder
  • salt
  • pepper

What You Need to Cook Vegan Amatriciana

  • 1 Microwave
  • 2 Jars 500 ml, thin seal
  • 1 Plate crisp

How to Prepare Vegan Amatriciana in Jar Cooking

  • Dry the tofu block with kitchen paper, patting it well.

    Then cut the tofu into small sticks with a knife.

  • Place the tofu sticks on a microwave crisp plate.

    Spray the tofu surface with extra virgin olive oil, then cook in the microwave with the special stand using the microwave+grill combination function at maximum power for 12 minutes.

  • Sauté half an onion in the microwave, or in a pan, with a little oil, then add it to the crushed peeled tomatoes in a bowl.

    Add the pepper and smoked paprika.

  • Flavor with a teaspoon of unsweetened cocoa, a teaspoon of salt and mix to combine.

  • Finally, add the sautéed tofu sticks and mix.

    Distribute the sauce in two 500 ml jars, clean the edges, and close with the lid and special seal.

    Seal with 4 clips as explained in the Instructions for Jar Cooking in the Microwave

    Cook each jar for 6 minutes at your tested power (I use 600W) and, once cooked, let them rest closed for at least 2 hours.

    Use your vegan Amatriciana to dress your favorite pasta shape!

How to Store Vegan Amatriciana in Jar Cooking

The vegan Amatriciana in jar cooking, once the resting time has passed, will form a vacuum seal that will allow us to keep it for up to 15 days in the refrigerator.
