Vegan Frittata in Jar Cooking

Vegan frittata in jar cooking a new preparation to add to my Vegan jar cooking recipes, very easy, prepared with Microwave Farinata and Microwave Tomato Sauce.

It cooks in just 8 minutes in the microwave and can be stored for up to 15 days thanks to the vacuum created by The microwave jar cooking technique.

Ingredients

  • 13 oz water
  • 3.5 oz chickpea flour
  • 2 tbsps extra virgin olive oil
  • Half tsp salt
  • 1 cup tomato sauce
  • extra virgin olive oil
  • salt
  • basil

Tools needed to cook the vegan frittata

  • 1 Microwave oven
  • 2 Jars 500 ml with thin seal
  • 1 Microwave baking tray crisp

How to prepare vegan frittata in jar cooking

  • Put the chickpea flour in a bowl.

    Slowly pour the water and stir with a whisk to avoid lumps. Add the salt and oil and stir again.

    Cover the bowl with a sheet of plastic wrap and let it rest for at least three hours, preferably overnight in the fridge.

    Grease a crisp baking tray with a diameter of 11 inches.

    Stir the farinata and pour it into the tray.

    Cook the farinata in the microwave with combined microwave function (600 w) plus grill at maximum power.

    Once cooked, remove from the oven and let it cool.

  • Prepare the Microwave Tomato Sauce.

    Finely chop the onion and place it in a bowl, add the oil and cleaned, crushed garlic and sauté in the microwave for 2 minutes at around 750 watts.

    Add canned tomatoes to the sautéed onion and mash them with a fork, add a pinch of salt, stir and cook for 8 minutes at 750 watts, stirring halfway through cooking. 

    If the tomato sauce boils too strongly in the microwave, you can place a microwave splatter shield over the bowl. 

    At the end of cooking, remove the garlic clove and add the basil leaves, stir and let it rest.

    Microwave Tomato Sauce
  • Cut the chickpea farinata into strips.

    Distribute a tablespoon of sauce in two jars 500 ml with thin seal.

    Divide the strips of farinata inside the two jars.

    Cover with the remaining tomato sauce.

    Clean the edges of each jar and close it with its lid with seal, then seal with 4 clips each as per Instructions for cooking in jar in the microwave.

    Cook one jar at a time in the microwave for 8 minutes at your tested power, I use 600W.

    Once ready, let the jars rest for 20 minutes to finish cooking and create a vacuum.

How to store the vegan frittata in jar cooking

The vegan frittata in microwave jar cooking can be stored for 15 days, still vacuum sealed, in the refrigerator.
