Vegan sausage with potatoes in jar cooking is a vegan variant of the classic Sausage in Jar Cooking with Potatoes, made with tofu sausages and therefore perfect for everyone following a vegan or vegetarian lifestyle.

Ingredients

  • 2 vegan sausages
  • 2 red potatoes
  • 1 clove garlic
  • 1 sprig rosemary
  • 1 tablespoon extra virgin olive oil
  • salt
  • smoked paprika
  • pepper

Tools

  • 1 Jar 1-liter with thin seal

How to Prepare Vegan Sausages with Potatoes in Jar Cooking

  • Wash the potatoes and remove any impurities with a knife.

    If the potatoes are new, like mine, you can cook them with the skin on, otherwise peel them.

    Cut the potatoes into cubes of about 3/4 inch.

    Place the potatoes in a bowl, season them with a crushed garlic clove, a sprig of rosemary, extra virgin olive oil, salt, pepper, and smoked paprika.

    Mix to season, then transfer them into the 1-liter jar.

    Add the vegan sausages into the jar.

    Clean the edges, place the lid with the seal, and seal the jar with the 4 clips as per Instructions for Cooking in a Jar in the Microwave.

  • Place the closed jar inside the microwave and cook at your tested power (I do it at 600 W) for 12 minutes.

    When the vegan sausages with potatoes in jar cooking are cooked, take them out and let them rest for at least 12 minutes before serving them at the table.

    This will complete their cooking, and once completely cooled, a vacuum seal will form, allowing them to be stored in the fridge for a long time.

How to Preserve Cooked Vegan Sausage with Potatoes in a Jar

Thanks to the microwave jar cooking, a vacuum seal is created, allowing you to store the vegan sausage with potatoes in the fridge for 15 days.
