The vegetable broth in jar cooking I propose today has all the taste of the old flavors, the ones grandma prepared for us to warm our days. The broth with vegetables in jar cooking is suitable for the diet of children and the elderly; it is perfect to enjoy as it is or to turn into a soup with vegetable broth or to become the base for our risottos. It keeps for a month in the fridge, thanks to the vacuum seal, and cooks in just 14 minutes. For this recipe, I followed the recipe from the site Cucchiaio d’argento, but since the broth is cooked in a jar, the long cooking time is achieved during post-cooking. To prolong it as much as possible, I wrapped the jar in a fleece cloth, allowing it to continue boiling, making the broth very tasty.

How to Make Vegetable Broth in Jar Cooking in the Microwave?

  • Wash and trim the zucchini, cut it into pieces, and distribute it into the jar. Trim and peel the carrots and celery, cut them into pieces, and add them to the zucchini. Slice the onion, wash the cherry tomatoes, and add them to the rest of the vegetables. Add the bay leaf, salt, and oil. Pour in the water, clean the jar’s rim, close, and latch.

  • Set the microwave to your tested power (I use 750 watts), insert the jar, and start cooking for 14 minutes*. Once cooking is finished, remove the jar from the microwave and wrap it in a wool or fleece cloth. Let it rest closed for 2 hours, preferably overnight.

  • The vegetable broth will continue to cook for several hours. After the resting phase, you can open the jar as per the instructions: unlatch, place the jar in the microwave, and start at your power for about 6 minutes or until it opens. Pass the vegetables through the food mill and serve.

Rosella’s Tips for Vegetable Broth in Jar Cooking

The vegetable broth in jar cooking can be stored in the fridge for a month. Leave the jar unlatched, so you can promptly notice if it loses the vacuum.

To preserve sauces and broths for a long time, I recommend using jars with new and thick seals.

The broth you see in the photo is only the liquid and filtered part. To avoid wasting the vegetables, you can pass them through the food mill, as I explained, or use them as a side dish or base for making a roast.

*Cooking times may vary. I used cold vegetables from the fridge and needed 14 minutes of cooking. Just check for the start of boiling, and (in the 1-liter jar) calculate 4 minutes.

Variations for Making Vegetable Broth in a Jar

If your diet is not vegan, you can add a crust of Grana Padano DOP; the broth will have a more robust flavor.

You can make the broth in 500 ml jars, halving all ingredients and cooking times.

Soup in Broth in Jar Cooking

Once the broth is obtained, pour 200 ml into a 500 ml jar, add 1.8 oz (50 g) of soup pasta that has a cooking time of 10 minutes, stir, clean the jar’s rim, latch it, and cook at 500 watts (one step below the tested power) for 2 minutes from boiling. Let the jar rest closed for 20 minutes, open the jar, and serve.
